Job Description:
1. Food Cost & Margin Control (Core Role)
• Monitor daily, weekly, and monthly food cost % per outlet
• Track theoretical vs actual food cost using recipes & POS data
• Control portioning, yields, batch sizes, and prep losses
• Identify pilferage, over-portioning, wastage, and expiry losses
• Validate menu pricing vs contribution margins
• Support menu engineering for profitability.
2. Inventory & Store Controls
• Oversee daily stock consumption and weekly stock counts
• Ensure strict FIFO, shelf-life, and expiry adherence
• Reconcile GRN vs invoice vs POS consumption
• Control high-value SKUs (cheese, sauces, meats, oils)
• Track non-food items (packaging, cutlery, disposables)
• Conduct surprise outlet audits and variance reporting.
3. POS, Aggregator & Sales Reconciliation
• Reconcile POS sales vs Zomato / Swiggy / other aggregators
• Track commissions, cancellations, refunds, discounts, promos
• Validate coupon, loyalty, and campaign cost impact
• Ensure daily cash, card, UPI, and wallet reconciliations
• Monitor store-level revenue leakages.
4. Vendor, Purchase & Payables Control
• Review vendor pricing, yield losses, and credit terms
• Validate purchase orders, GRNs, and invoices
• Monitor rate deviations and unauthorized purchases
• Ensure timely vendor payments without overpayments
• Support vendor negotiations with cost intelligence.
5. Accounting & Books of Accounts
• Ensure accurate booking of purchases, sales, and inventory
• Maintain inventory accounting & month-end stock valuation
• Support monthly P&L preparation outlet-wise
• Track COGS, manpower cost, utilities, and overheads
• Coordinate with statutory auditors and internal auditors.
6. Compliance & Controls
• Ensure compliance with GST, FSSAI, labour norms (finance side)
• Validate GST input credits on food & packaging
• Maintain audit-ready documentation and SOP adherence
• Flag control weaknesses and recommend corrective actions.
7. MIS & Reporting
• Prepare daily sales & food cost dashboards
• Weekly reports:
• Food cost %
• Inventory variance
• Outlet profitability
• Monthly reports:
• Outlet-wise P&L
• Contribution margin analysis
• Cost trend analysis
• Present actionable insights, not just numbers.
Qualification:
18Skills:
Strong understanding of QSR economics
• Hands-on experience with POS systems (Petpooja, POSist, etc.)
• Excellent inventory, costing, and reconciliation skills
• High attention to detail with ground-level operational sense
• Ability to push compliance at outlet level
• Strong Excel / MIS / dashboarding capability
